Anne Lee is the Director of Nutritional Services for Schar USA. Previously she was the nutritionist at the Celiac Disease Center at Columbia University where she was involved in patient care, and research. Her research has resulted in published articles on the effect of a gluten-free diet on the quality of life, the nutritional adequacy of the gluten-free diet, the economic impact of a gluten free diet, and on the cross contamination of inherently gluten free grains. She has authored chapters on celiac disease in nutrition textbooks as well as co-authored a chapter in a gastroenterology text. Anne has developed numerous educational materials on the gluten free diet for patients and both clinical and food service professionals. Anne has been an ADA member for many years and has reviewed the chapters on celiac disease for the ADA on-line nutrition care manual. She is also a member of the ADA Gluten Intolerance Work Group who developed the Gluten Intolerance tool kit.
She completed her Doctorate in Nutrition Education this Fall from Teachers College of Columbia University. Her dissertation topic is the impact of social support networks on quality of life in individuals with celiac disease

Pam Jordan was diagnosed with Celiac Disease in January 2011 after struggling for fifteen years with symptoms. She is a working wife and mom to three young kids. Her blog, I'm A Celiac, provides simple Gluten Free recipes with common ingredients, product reviews, restaurant reviews, and giveaways. Pam also authored a cookbook, Family Approved Gluten Free Recipes. Every week she will post a weekly menu to help you feed your family safe meals.
Beth Mincher - Owner of Elemental Wellness and Beth Mincher Health Coaching
Beth is a Certified Holistic Health Coach, board certified by the American Association of Drugless Practitioners, and received her training through the Institute for Integrative Nutrition. She focuses on helping people achieve optimal wellness through a whole body approach; emphasizing the importance of not only diet, but other factors such as: physical activity, personal relationships, career, emotional wellness, lifestyle, prevention and the use of natural therapies.
A few years ago through a diagnosis of migraines and tension headaches related to dietary intolerance, Beth realized the need to pay closer attention to food choices which also sparked a renewed interest in studying nutrition and fitness. She is passionate about sharing her personal experiences, studies and knowledge with others, to help them grow as well and create their own path to personal vitality. Beth specializes in gluten free living, food allergies/intolerances and digestive health.
